Three liters. That’s a lot of food. This tray measures 12.8 inches by 10.24 inches, with a 56mm wall. If you’ve ever seen a hotel steam pan, this is roughly twothirds of that size – big enough to hold a whole leg of lamb, a dozen chicken thighs with vegetables, or enough vegetarian lasagna to feed ten people.
A convention center kitchen we visited last year uses trays like these for their employee cafeteria. They cook everything in batch ovens, portion into aluminum trays, and slide them into heated holding cabinets. The 56mm depth is key here: deeper than a standard half pan, so the food doesn’t dry out during a two hour service, but not so deep that the bottom layer gets crushed. The head chef said they switched from reusable steel pans because the dishwashing labor was killing their budget. Now they recycle the aluminum and call it a day.
From a manufacturing standpoint, producing a 3000ml tray pushes the limits of standard foil container tooling. Most automatic presses can handle up to 250mm in one direction, but this one at 325mm requires a larger platen. Factories that specialize in jumbo trays often use transfer presses – the part moves from station to station on fingers rather than on a coil. That allows deeper draws without tearing the aluminum. The alloy is typically 8011 or 3003, with a thickness around 0.07mm to 0.09mm. Thicker than a standard takeout tray, because the larger surface area needs more structural strength.
Why would a business invest in a tray this big? Catering, for one. A wedding with 150 guests – you don’t want to handle 50 small trays of mashed potatoes. You want six or seven large trays that you can pull from the oven and place directly on the buffet line. Another use case: meal prep for shelters or large community kitchens. One non profit we know cooks once a day and portions into 3000ml aluminum trays, then freezes them. Volunteers pick up frozen trays and reheat at distribution sites. The 56mm depth leaves enough headspace for expansion during freezing.
Customization at this scale can be quite specific. Some buyers request reinforced corners because large trays tend to flex when full. Others want a smooth bottom for better heat conduction on flat griddles. We can also add measurement marks inside the tray – a niche request, but useful for kitchens that need consistent portioning. Embossed logos are possible too, though the die cost is higher due to the larger surface area.
The environmental angle: aluminum trays of this size actually reduce waste compared to multiple smaller trays. One large tray uses less material per ounce of food than two 1500ml trays because the wall area grows slower than the base area. Plus, recycling a single large tray is easier for consumers than sorting several small ones. Some municipalities have bulk recycling drop offs specifically for catering trays.
Packing for this model is typically 250 or 500 pieces per carton, depending on nesting efficiency. Lids are available in cardboard or heavy duty plastic. For the plastic version, we recommend a vented lid if you’re holding hot food for extended periods – prevents condensation from dripping back onto the food.
