Ever tried to fit a whole salmon in a square tray? You have to cut off the tail. This one is 10.94 inches long – longer than a standard sheet of paper. A 4 pound salmon, head and tail removed, fits without bending. The 87mm depth gives enough room for a layer of lemon slices, herbs, and a cup of white wine. A seafood restaurant in Seattle uses these for their “oven ready” salmon kits. They season the fish, add vegetables, seal with a foil lid, and freeze. Customers bake at 190°C for 30 minutes.
