    Walk into any convention center kitchen during a big trade show. You’ll see stacks of these 12.6 inch square gold trays. The reason is simple: one tray holds 8.6 liters – that’s about 9 quarts of soup, or enough pulled pork for 36 sliders, or a full tray of lasagna that feeds 22 people. The depth is 139mm, which is over 5 inches. That’s deeper than most home ovens can handle, but commercial ovens and warming cabinets have no problem.

    A convention center chef in Orlando told me they switched to these for their “grab and go” staff meals. They cook a massive batch of jambalaya, portion into these trays, then seal them with a heat seal foil lid. The heat seal is critical – it creates a leakproof, tamper evident seal that holds up during transport across the convention center. No spills on the golf carts. The gold color makes the staff meal feel less like cafeteria food.

    The sealing works like this: the foil lid is not crimped or folded. You place it over the rim and run the tray through a heat sealer. The machine melts a thin layer of sealant on the lid, bonding it to the container’s flange. That’s the only way to get a truly leakproof closure for thin soups or saucy dishes. The plastic lid, on the other hand, snaps on and has a tightfitting edge that grips the container’s rim. It won’t leak for thick stews, but for thin liquids, heat seal is the answer.

    A soup kitchen in Boston uses these with the plastic lid for their weekly distribution. They fill with beef stew, snap on the lid (it clicks into place around the rim), and stack the trays in a refrigerated truck. The 139mm depth allows a full portion of stew plus a layer of mashed potatoes on top without the lid touching the food. The plastic lid is clear, so recipients can see what they’re getting. The kitchen director said the gold color brings a sense of dignity to the meal.

    Packing is 100 pieces per carton. The carton measures 46 x 33 x 33cm – compact considering the tray size, because they nest deeply. The gold lacquer is baked onto the aluminum coil before forming, so it won’t flake or scratch when the trays rub against each other during shipping.

    One more use: a food bank uses these for their “holiday turkey” program. They place a whole cooked turkey in the tray, add gravy, then heat seal a foil lid. The seal keeps the gravy from leaking during distribution. Families pick up the tray, remove the foil lid (it peels off), and reheat the turkey in the same tray. The gold color makes the holiday meal feel special.
